Stuffed Green Peppers

I think I did Mom proud!

Recipe: From my August 9, 2011 notes with Mom and my August 16, 2020 (additions/changes)

Mix:
Cooked Rice 1/2 cup (salted water and tab of butter, make prior)
Raw Meat (ground turkey 1/2 lb) – Mom used beef or pork/beef I’m sure 🙂
Parsley (from garden a LOT, leaves chopped fine)
Cheese (Romano 2 heaping TBS)
(Olive Oil big splash)
Salt
Black Pepper
(Sauce 3 TBS for moisture and taste)
(1/4 green pepper chopped fine)
Egg 1

MIX together moist

Four Green Peppers uncooked: cut tops off, save for later, core, rinse, salt the inside

Stuff mix into peppers

Place into baking dish

Top with sauce (layer sauce, cheese, put pepper edges around top, cheese dollop, top with dollop of sauce

Preheat oven 350 degrees

Bake COVERED tent of foil 30 minutes
Continue baking UNCOVERED 50 minutes

Serve with sauce and Romano on the side.
